Vinification: the Listán Blanco is co-planted with the Negro in this plot so they are harvested and vinified together. Whole bunches are macerated for eight to nine days before being pressed and racked to barrel. Aged for 12 months prior to bottling. The grapes come from a plot called El Tión, in a forest clearing at 1100m elevation. Very old vines that Viki recovered in 2018. 

Unfined and unfiltered. 75cl. Contains sulphites (<15ppm).
