Single-vineyard chardonnay. North-facing vineyard in pago Carrascal. Wholebunch pressing in a basket press with 550l of extraction. Hyper-oxidation of the must. Fermentation of unsettled must in second- and third-year tight-grain oak barrels (Damy, François Freres, Cavin). Ageing with full lees for 10 months with just a single batonnage in mid-winter. Unfiltered and unfined. Sulphured once, just before bottling (50ppm total).
Toasty sweet citrus (lemon, lime, orange), canteloup melon, hazelnut cream, popcorn. Velvety in texture with a supple, mellow, ripe palate. It twinkles and tingles and shimmers with electric, salty, citrusy minerality.
ABV: 13.5%
Organically farmed grapes.
