Co-fermentation of hand-harvested clone 84 Palomino (old clone from Sanlúcar, today representing less than a 5% of the Jerez area) and Arinto (15%). Lightly stomped and kept on skins for 12 hours prior to wholebunch pressing in a basket press. Settling of solids for 12 hours in chestnut wood ‘bocoyes’ (large-format Sherry casks) that previously contain Manzanilla or Amontillado Sherry. Reductive ageing of the wine where the barrel are filled religiously once a week. Racked once, just before bottling without filtration.
Lime oil, ripe pear, apple and smoked butter. Fenugreek? Zingy and sapid with citrusy acid and soft texture.
ABV: 12%
