The grapes come from two old, ungrafted vineyard plots on pure 'picón' volcanic soil in the south of the island: one in Las Machuqueras and one in Las Manchas. Extremely low yields - <2,000kg/ha. The grapes were chilled overnight, then macerated with skins for 48 hours before being transferred to steel tank for fermentation. The must was then racked off gross lees and aged in steel tank for around 12 months, followed by around six months in bottle.
Saline with notes of wild honey, dried apple and beeswax. It has a salty minerality but also a sense of richness typical of listán blanco from the hot south of the island.
13% vol.
Unfined and unfiltered. 75cl. Contains sulphites (<20ppm).
