An Itata cinsault petnat (naturally sparkling wine) made by Guarilihue-based Aussie natural winemaker Alice L'Estrange. The grapes were hand-picked into crates of 18kg, crushed, and the following day the free-run taken to tank to ferment. A small dose of SO2 was added at crushing, but this has since evaporated. Lab tests read 2ppm total and 1ppm free. Hand-bottled at 996 density.
Alice: "This is my second vintage working with Pepe, a neighbour in Guarilihue. He abandoned glyphosate and all other chemical fertilisers with my commitment to pay increasingly high prices. My aim with the pop is a gentle bead, no disgorging and no subsequent gushing, a focus on fruit and texture."
Super-refreshing with very fine bubbles and a delicate strawberry Hubba Bubba and sherbert-y watermelon flavour. Party juice.

Unfined and unfiltered. 75cl. Contains sulphites (<10ppm).
